Description
Silveri Rose Cuvee on nose refined hints of wild strawberries and redcurrants, with a fresh sensation of hawthorn flowers, underpinned by a delicate note of crusty bread deriving from its more than three years’ ageing on the yeasts.
Fresh and fruity, with a touch of mellowness: the flavour of sweet almonds is supported by an acidulous vein that is extraordinarily appealing. 70 % Pinot Noir, 30 % Chardonnay.
The Pinot Noir harvest began on second week of August.
Grapes are pressed without crushing. Juice is given a short period of settling before racking and inoculation with a selected yeast. The base wines are fermented and aged in a mixture of stainless steel tanks. Following a spontaneous malolactic fermentation the wines are left to age on lees for a further ten months prior to blending each June.
The wine blend is put on tirage using prise de mousse yeast the following July and subsequently allowed to attain a minimum of 36 mounts lees ageing in the bottle before disgorgement.
