Preden predstavim najnovej\u0161o odli\u010dno slovensko destilirano pija\u010do, \u0161e malce prej raz\u0161irim znanje o dimljenih viskijih. Osebno so mi dimljeni viskiji med najljub\u0161imi zvrstmi destilatov.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u0160otast viski<\/h2>\n\n\n\n<p>Dimljen viski oz. dobesedni prevod peated whisky je \u0161otast viski daje viskiju dimljen vonj, ki se pridobi z dimljenjem je\u010dmena. Razli\u010dnost \u0161ote (ravninska, hribovska &#8230;) in intenzivnost dima dolo\u010da intenzivnost vonja. Obi\u010dajno su\u0161ijo je\u010dmen nad \u0161otovih ognjem med 18 in 30 ur.<\/p>\n\n\n\n<p>Zakaj \u0161ota? Vsi vemo, da je prava domovina viskija \u0160kotska in tam ni kaj veliko gozdov, je pa veliko \u0161ote, ki so jo uporabljali namesto drv za gretje. Seveda so jo uporabljale tudi destilarne, predvsem v oddaljenih krajih in otokih, kjer nekatere \u0161e danes za svoje potrebe dimijo je\u010dmen (podro\u010dja Islay, Orkney, Speyside).<\/p>\n\n\n\n<p>S prihodom vlaka na \u0160kotsko je velina destilarn v ravninskem delu za\u010dela uporabljati za gorivo premog namesto \u0161ote. Premog je gorel bolj enakomerno in z manj dima kot \u0161ota.<\/p>\n\n\n\n<p>Ne se bat, da bo zaradi prevelike porabe zmanjkalo \u0161ote. Res je v naketerih predelih ni ve\u010d, a na otokih jo je \u0161e veliko, celo ve\u010d, ve\u010d je zraste na novo, kot jo porabijo destilarne.<\/p>\n\n\n\n<p>Najbolj dimljeni oz. \u0161otasti so viskiji iz Islay regije. Za najbolj dimljenega na svetu velja \u0161kotski Octomore. Vredno je poskusiti Ardbeg, Talisker, Kilchoman, Lagavulin &#8230; Ne\u0161kotski \u0161otasti viskiji prihajajo iz Indije, Japonske in Nove Zelandije npr. indjski Amrut Peated je odli\u010den ali pa japonski Suntory Hakushu.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Slovenska premiera<\/h2>\n\n\n\n<p>In zakaj danes tako na \u0161iroko govorim o \u0161oti? Kon\u010dno smo tudi Slovenci dobili prvi pravi peated viski. Z veseljem predstavljam prvi slovenski \u0161otast viski, ki prihaja iz Destilarne Broken Bones, ki so par mesecev nazaj razprodali prvo serijo &#8220;navadnega&#8221; viskija, sedaj pa so predstavili \u0161e dimljeno varianto, enako v omejeni seriji 66 steklenic.<\/p>\n\n\n\n<p>Za\u010detki destilarne Broken Bones segajo v leto 2012, ko sta Bo\u0161tjan in Borut za\u010dela razmi\u0161ljati o tem kako narediti dober slovenski viski. Vmes sta za\u010dela delati \u0161e odli\u010dne gine, a ljubezen do viskija ni zamrla. Utele\u0161a naravna bogastva Slovenije &#8211; neskon\u010dne gozdove, ki ponujajo zna\u010dilen hrastov les, \u010disto voda iz gora in sve\u017e zrak.<\/p>\n\n\n\n<p>Narejen je iz dimljenega je\u010dmenovega slada, ki so ga su\u0161ili s kurjenjem \u0161ote, izbranih kvasovk in vode. Po destilaciji ( druga\u010dna kot za klasi\u010den viski) je donegovan v dvojno rabljenih ameri\u0161kih sodih in sodov iz slovenskega hrasta. Ni hladno filtriran in seveda brez dodanih barvil.<\/p>\n\n\n\n<p>Prva serija <a href=\"https:\/\/sprememba.si\/SiSQ-Spirits\/trgovina\/broken-bones-peated-whisky\/\" target=\"_blank\" rel=\"noreferrer noopener\">Broken Bones Peated viski<\/a> je na voljo v ekskluzivni seriji 66 steklenic, ki so o\u0161tevil\u010dene.
